Mysore/Mysuru: In a significant scientific breakthrough, CFTRI researchers have successfully developed an innovative process for efficiently producing semolina from finger millet. The soft texture and small size of finger millet grains posed challenges in traditional semolina production.
However, with this new process, more than 90 percent of the product is obtained with controlled granulation, revolutionising the production of finger millet (ragi) semolina, combining nutrition and convenience in a single package. This breakthrough has enabled the creation of finger millet instant breakfast mixes and kichadi mixes, offering both convenience and nutrition for health-conscious consumers.
The process involves a gentle combination of mechanical and thermal treatments, ensuring optimal resource utilisation and reducing wastage.
These instant breakfast mixes and kichadi mix cater to the fast-paced lifestyles of individuals and families, providing a convenient and delicious way to incorporate the goodness of finger millet into daily meals without compromising on taste.
